If you have a problem controlling the foam add a little butter before putting your jam into the jars. Beatiful pictures though.

It is great to see people canning w/o a water bath, especially things like jam and jelly. Just remember to flip your jars right side up again after 10-15 minutes or they just won’t be that pretty, LOL. Heat sealing your jar this way is perfectly safe.

Great tutorial, but you should ALWAYS use a water bath at the end.

Krys – I soak the jar lids in boiling water – or rather pour boiling water over them as I’m spooning jam into jars – this helps the sealing IMO because it heats up the “glue” that forms the seal and makes it work faster.

Just my tip and not really mine, I got it from a canning/pectin pamphlet…
